Rihanna's Bajan Chicken Curry

**In our September issue, we brought you the story of Rihanna's personal chef. This is the recipe for one of Rihanna's favourite dishes - enjoy! Rihanna’s Bajan Chicken Curry**

2 tblsp olive oil
1 medium yellow onion, chopped
3 cloves garlic, chopped
3 boneless chicken breasts, cubed
1 large russet potato, cubed
½ tblsp roasted curry powder
830ml chicken broth
1½ tblsp curry powder
salt and pepper to taste
Bajan seasoning, to taste (see below)
2 tblsp coconut milk (optional)

In a large skillet on medium heat, add olive oil and sauté onions for 2 minutes. Add garlic and cook for an additional 2 minutes. Add chicken and sauté until done. Add potatoes, roasted curry powder, and enough broth to just cover chicken and potatoes. Reduce heat and simmer for about 30 minutes or until potatoes are tender and broth has reduced. Add curry powder, salt and pepper, and Bajan seasoning to taste. Turn flame off and add coconut milk. It will thicken upon sitting. Enjoy!

Bajan Seasoning
1 bunch green onions
8-10 bird’s eye chillis
1 medium onion
1 red capsicum, chopped
1 celery stalk
4 cloves garlic
1 bunch flat leaf parsley, chopped
3 sprigs fresh thyme, stemmed
3 sprigs fresh marjoram, stemmed
Juice of 4 limes
½ cup apple cider vinegar
1 tablespoon Worcestershire sauce
salt & pepper

Combine all ingredients in a blender. Process in blender until smooth and refrigerate.
